Sarthou, who lived in Cosica and Bordeaux until 1950 when he moved to Paris, studied at the Ecole des Beaux-Arts. Later he established a studio in Sete. As well as participating in shows of the Ecole de Paris, he staged many one-man exhibitions. Works by Sarthou can be found in some thirty museums in France and abroad.
